Sweet-N-Sour Chicken

2 1/2-3 lbs chicken, boneless
1/2 of 8 oz bottle Russian dressing (dark red kind)
1 envelope onion soup mix
1/2 of 10 oz jar apricot preserves
water or pineapple chunks and juice

Put chicken pieces in shallow baking pan. Mix dressing, soup mix and preserves with water. Pour over chicken and bake in 350 degree oven for 1 1/4 hours or until chicken is tender.

Makes 4 servings. Good with cooked rice.
